I love days like this! We have nowhere we have to be and no one waiting for us to do anything Right now I am enjoying the sounds of laundry going and the look of a newly vacuumed living room. One of my sweeties is sitting next to me singing and playing Littlest Pet Shop and the other one is outside building a golf course with scrap wood. I go back and forth with whether to let them out to play while the rest of the neighborhood is in school. But today I am allowing it. It doesn't seem quite fair to lock them in the house on a beautiful day when they have finished their school work.
I am seeing something that hasn't been there before with my son and reading. I couldn't really describe it but it is like a little spark. I was floored at how fluently he read today and feel like each day my earnest prayers are being answered.
Tonight is homemade pizza with my favorite pizza crust recipe. Boy is it easy!I will make a double batch and make cheese sticks out of one of them. I will post it at the bottom! Maybe I will make some banana bread with all of those bags of frozen banana in my freezer.
Delicious Pizza Crust
1 cup warm water
1 T. yeast
1 T. brown sugar
1 T. olive oil
2 1/2 cups bread flour
1 t. salt
Dissolve yeast in water. Add remaining ingredients. If you would like to add garlic powder, italian seasoning, or really whatever you would like to spice it up, this is the time to do it. Mix well. (I use my Kitchen Aid mixer for this whole process.) Dough will form into a nice ball. Spray a large bowl with non-stick spray and transfer ball of dough into this bowl. The dough will be sticky so a good trick is to spray your hands with the non-stick spray as well. Place bowl in warm spot covered with kitchen towel. Let dough rise for 45 minutes to 1 hour until doubled. Punch down. Let dough rise again until doubled.
This dough can be used for breadsticks or pizza crust. Enjoy!
